Chipotle Lime Chicken

Serves 4



  • Leave skin on thighs but remove bones by cutting two slits along the sides. Rinse chicken with cold water and pat dry. Set aside.
  • In a big bowl mix lime juice, lime zest, olive oil, cilantro, jalepeno, garlic, chili powder, honey and salt. This will create your marinade.
  • Save some of the marinade for basting and add chicken to the rest. Make sure to stir and coat the chicken evenly. Marinate for at least 2 hours.
  • Grill the chicken until golden brown and charred on both sides, making sure to baste with leftover marinade. 
  • Serve with fresh lime wedges.
