Easy Snack: Indian-Spiced Roasted Chickpeas

Makes 2 cups.

PREPARATION:

  • Preheat your oven to 400 degrees.
  • Place chickpeas in a large bowl.
  • Melt coconut oil. Add spices.
  • Pour over chickpeas.
  • Mix, ensuring chickpeas are coated evenly.
  • Spread chickpeas on a cookie sheet.
  • Bake 35-40 minutes, stirring often. Keep a close eye on them nearing the end of baking. They can burn easily.
  • The chickpeas are ready when they are brown and crispy. To test, remove one chickpea from the tray and allow it to cool. If it's still chewy inside, they need more time.
  • Allow to cool, then store in an air-tight container.
