Thai Chicken Kabobs

  • 1/2 lb chicken thighs, boneless skinless--find at Eckerlin Meats
  • 2 Tbsp. Thai Seasoning--find at Colonel De's Herbs & Spices
  • 2 Tbsp. Soy Sauce--find at Saigon Market and Colonel De's Herbs & Spices
  • 1 Tbsp. Sesame Oil--find at Saigon Market
  • Additional Soy Sauce
  • 1 onion--find at Catanzaro Produce and Roth's Produce
  • 2 bell peppers--find at Catanzaro Produce and Roth's Produce
  • 1 lime--find at Catanzaro Produce and Roth's Produce
  • 4 oz. mushrooms--find at Catanzaro Produce and Roth's Produce
  • Bamboo skewers--find at Dean's Mediterranean Imports and Gramma Debbie's Kitchen
     1. Soak skewers in water about 10 minutes
     2. Trim chicken and cut into 1 1/2 inch chunks.
     3. Place in large freezer bag or in a large mixing bowl.
     4. Add 2 Tbsp. soy sauce, Thai Seasoning, sesame oil, and juice of 1 lime.
     5. Mix thoroughly and refrigerate overnight or for 30 minutes
     6. Cut onion and bell peppers into 1 1/2 - 2 inch pieces.
     7. Skewer chicken and veggies as desired. (Do not skewer together tightly).
     8. Grill over a high flame about 7 minutes, rotating occasionally. Brush veggies with additional soy sauce throughout cooking as desired.
