Spinach Pesto Bruschetta
April | Cynthia's Kitchen Corner Ingredients: 1/2 pound of spinach, picked and washed 1 cup toasted and salted cashews 2-3 cloves of garlic 1/2 cup shredded Parmesan cheese 1/2 cup olive oil Juice of one lemon Method: 1. In a food processor chop spinach 2. Add nuts and garlic 3. Add Parmesan cheese 4. Add lemon juice 5. Drizzle in olive oil until a paste is formed Bruschetta: Ingredients: 6 -8 slices of Italian bread Olive oil for brushing 2 cups of diced tomatoes 2 Tbs. cut basil 1 Tbs. oregano 2 Tbs. olive oil 1 Tbs. balsamic vinegar 1 Tbs. thyme 1/4 tsp. salt 1/2 tsp. black pepper Method: 1. Mix tomatoes, spices, oil and vinegar in a bowl. 2. Let marinate 1 hour 3. Brush bread on both sides with olive oil 4. Toast on grill 5. Spread bread with pesto 6. Top with tomato mixture Note: Great party food. |
